Owners of the recently opened butcher’s shop, Pyrenees Premium Cuts, James and Hayley Collicoat are delighted with the response from the community during the first few weeks of business.
When they decided to make the move to Avoca and open the butcher’s shop that had been closed since the start of the year, they were overwhelmed by the support from the community.
“We’ve had offers of help from tradies and the whole town has got behind us” said Hayley.
“Avoca Business & Tourism provided us with a letter of support in the initial stages and assisted us with contacts to make sure that everything came |together so we could open the door as soon as possible” Hayley added
The Collicoats are keen to support local farmers and will ensure that their products are local and homegrown. They also have a range of local wines to complement their range of meat and are hopeful of having their smallgoods’ licence finalized soon.
To top off their successful start to business in Avoca, they have just received news that they won 1st prize for their pork sausages in the regional sausage awards. They also came 2nd with their chicken & satay and Greek lamb & fetta sausages. They will now represent Avoca in the state titles and will have the opportunity to showcase their products, and Avoca, at this year’s Royal Melbourne Show.
Hayley and James have settled into Avoca with their 4 young children, two of whom attend the local primary school and pre-school. The shop is open from 7:30am to 6pm Monday to Friday and 7:30am to 12 noon on Saturday, so call in and say “Hi” and welcome them to the town.
